Lipid Peroxides

Using the colorimetric method (Hb/MB change) developed by Kyowa Medex Co., Inc. lipid hydroperoxides (lipid peroxides) are specifically analyzed. The Hb/MB method used in the United States for food testing is valued as having a high specificity for lipid hydroperoxides (lipid peroxides). Making further improvements to this Hb/MB method at our assay center, we have developed a colorimetric method (Hb/MB change) optimized for carrying out measurements on cooking oils.

In vivo, lipid peroxides can be used as an indication of a variety of conditions as given below.

• relationship with; carcinogenesis by interacting with DNA
• relationship with; carcinogenesis through acceleration of free radical oxygen production
• relationship with; arteriosclerosis-related presentations such as myocardial infarction and cerebrovascular disorders
• relationship with; diabetes, liver disease, etc.

Oxidisation of the oil produces lipid peroxides. Different from common methods used for judging the deterioration and rancid oxidisation of oils and fats such as acid value (AV), peroxide value (POV), and the thiobarbituric acid method (TBA), this method measures the levels of actual lipid peroxides themselves present in the test material. We believe this will play a useful role in development and safety testing of safety- and health-orientated cooking oils.

A number of commercial cooking oils were analyzed using this method.
Among the cooking oils, those tending to produce lipid peroxides were identified.
Promotion of lipid peroxide production was found particularly in ultraviolet irradiated products.


















Analysis request procedure
1. Request of analysis
The client phones or sends an electronic mail to the assay center to request an analysis.
2. Sending the samples
The client sends the samples (each 2g or over) together with the analysis request form and analysis description form to the assay center.
3. Reporting of results
Depending on the sample number, results will be sent through the mail in 10 working days.
4. Request for payment
An invoice will be sent after the testing is completed.
