Blood serum Vitamin C measurements are carried out by oxidation using ascorbic acid oxidase.
Vitamin C is variedly involved in a number of different metabolites in the body, such as being used for the biosynthesis of amino acids. Vitamin C is also known to be an important factor for the synthesis and conservation of collagen in the body, with a shortage of Vitamin C resulting in marked collagen synthesis inhibition.
The strong anti-oxidating effect of Vitamin C is also used to prevent the oxidation of foods, and included in supplements, health foods and drinks.
Although HPLC is most often used for measuring levels of Vitamin C in blood serum, an even quicker and more specialized method for multiple sample testing has been developed based on enzymes at Kyowa Medex Co., Inc.. This method is under patent (patent number 4073963).

Good correlation is seen between the HPLC method of measurement and the enzyme-based (MX) method.
